Braised Bitter Gourd With Chicken

So happy to see Taiwanese bitter gourd in market today, remembered when I was traveled to Taiwan, I was so impressed by this bitter gourd.



These are what you need......


Utensils

Wok


Ingredients

200gm Taiwanese bitter gourd, cut into chunks
3 chicken drums, chopped into 5 pcs each
1 tablespoon preserved black bean, finely chopped
1 tablespoon sugar
Salt to taste
Water
Oil


Instructions

  1. Heat up the wok with oil, stir fry the preserved black bean till fragrance,
  2. Add in chicken fry for few minutes, 
  3. Add in bitter gourd fry for few minutes. 
  4. Add enough water to cover all the ingredients, turn to high flame, bring to boil. 
  5. Turn down to medium flame, braising for 1/2 hour
  6. Turn up to high flame to thicken the gravy, add in sugar and salt to taste.
Now the dish is ready to serve .............

Taiwan Fried Chicken (咸酥鸡)

Let's be Taiwanese today,  thank you to the sundry shop in the market selling sweet potato starch.




These are what you need .......


Utensils

Pot
Air flyer


Ingredients

3 chicken drums, without skin, without bone, cut into small pieces
1 egg beaten
3 teaspoons sugar
3 tablespoons Hua Tiao rice wine
100gm sweet potato starch
Oil
Few coriander for garnish
Some Ajishio
Pinch of pepper

Instructions

Marinate chicken with sugar and rice wine for 1/2 hour, add in the beaten egg follow by sweet potato starch, by then heat up the pot with lot of oil to deep fry the chicken, when chicken turn to light brown, take out from pot transfer to air flyer, set air flyer to
200° fry till golden brown. Garnish the chicken with coriander. Now is ready to serve........



Tips : Purpose to transfer to air flyer is to reduce        the feeling of oiliness from the deep fry

Emperor Chicken


Here is a convenient and simple dish for working mother, it can be prepared before go to work or after work, after all the rice cooker will keep it warm till you are back to work.

These are what you need...


Utensils
  • Aluminium foil
  • Rice cooker

Ingredients
  • 1 pack of A1 Emperor Herbs Spice
  • 30gm of Goji, Chinese Wolfberry (枸杞)
  • Few pieces of polygonatum odoratum (海竹)
  • 3 chicken drums without skin chop into 4 pcs
  • half tea spoon of salt rub





Instructions
1. Use the aluminum foil provided by the A1 herbs spice, put the chicken in it,
2. Use half packet of the herbs spice and half tea spoon of salt rub all over the chicken,
3. Add in Chinese wolfberry and polygonatum odoratum, mix well then fold up.
4. Put in the steamer while cook rice,
5. After rice is cooked, Emperor Chicken also ready to serve.


Herbal Advise
If you are feeling heaty, can add 20g of 洋蔘須 in it, that will neutralise the heatiness.
